I fucking love beef jerky.

Not that bullshit you get at every gas station ever, but the legit, delicious, thick, not-too-dry and not-too-moist, chewy, smoky jerky. Authentic stuff.

There's plenty of great options down here in Texas, but its insanely expensive for what I figure is a very, very thing to make.

I'm starting this in hopes to find delicious jerky options that aren't going to destroy my bank account.

OR

Delicious, easy to make jerky instructions would also be welcome.

This is my favorite, by the way. Its not as pricey as some others, but they have 9-5 hours its just hard for me to remember to call them when I'm at work, and there's no e-commerce option. It's a chore to get it ordered.

Decent jerky has always been pricey, but the cost of beef has went up around 30 to even 50% around much of the nation.

Thus you see the price on a tiny bag o jerky at the gas station and go "WTF is this stuff made from unicorn livers?"

Goose breast makes some the best Jerky ever. If you are a goose hunter or know of any that would give ya some breasts your golden. All you need is a extruder, meat grander and dehydrator. And jerky spice you can make your own or go to Cabelas or any outdoor place. Lean meat is the key and goose breast is lean and its better than venison jerky.

You can buy lean round steak and jerky spice and hang the strips on oven rack at 150 to 175 and its pretty good too. beats any the store bought and rivals some the best real jerky as you mentioned.

Nice, thanks. I'll see if I can find goose bewbs from one of my hunter buddies.

The stuff that I linked to earlier is smoked with pecan, and tastes phenomenal. I'm worried that I wont get any of the smokiness in a traditional oven, even though its likely the easiest method.

A jerky gun (http://www.amazon.com/Weston-37-0101-W-Original-Jerky-Gun/dp/B000WZJOQY) and a home dehydrator makes tasty jerky way, way easier than thin slicing a shit-ton of meat. Just mix spices/smoke with really lean hamburger, load the gun and lay strips down in the dehydrator. Chewy but doesn't break your teeth.

Yeah, I asked for almost all hamburger after my first deer for that exact reason. They had to add some fat but I wasn't chewing on tree bark.

As far as deer meat, the single best product I've EVER had was summer sausage with cheddar and jalapeno in it.

That stuff is incredible... eat it alone with crackers, make a sandwich with lettuce and tomato, no matter what you do its awesome.

I would guess this is because deer is probably the 4th ingredient in this recipe.

It's a dry nonsmoke mix, so it might not be what you're looking for, but it's quick, cheap, and easy to make if you just want to try it out.

Old Trapper is the most reasonably priced and good tasting brand of jerky I've found. Get a jumbo bag at QT or Hyvee for $11.

Key thing to remember on the price of jerky is that 10lb of raw cooks/dries out to about 4lbs or less and the price of a good beef roast has went up. I'm cautious of cheap jerky because I want to know it wasn't made from scrap.

I assume you're saying you used flank steak? What price are you paying for it? Pretty expensive here although I haven't looked at it recently because it hasn't necessarily been grilling weather.

Same here. Back in the day when I was cutting retail meat we couldn't hardly give it away. We were breaking our own sides and fronts then and it went into the scraps for ground beef most of the time. There were few people that knew how good a flank steak could be.

I make a lot of venison jersey, some goose and some beef. Here's the thing. I'll use a couple of venison roasts, make two full gallon bags of jersey. It's two days of marinating and two days of dehydrating. Then my kids and I devour it in like three weeks.

It's way cheaper to make your own but time consuming if you eat a lot of for a rtwo pound roast.
2 cups soy sauce
1 cup worchestershire
2 tablespoons liquid smoke
Quarter cup red chili flakes
1 cup orange juice
Two tablespoons minced garlic
Mix all those for the marinade. Slice the meat to 1/4 inch slices. Marinate sliced meat for two days. Then dehydrate in a dehydrator. Mine is the Ronco model but any will do.

They have some amazing and some not so amazing flavors. Their original smoked hickory is a close to GOOD beef jerky as you can get perfect black pepper kick. Bold Terryaki is great and we sell a lot of ghost pepper.
You can buy a box of 144 sticks for .55c each and have meatsticks for months!

This is true. It's criminal the way meat prices have gone up. A friend of mine told me about Zaycon - and I thought he was nuts until we tried it. Holy shit!

When I am going to make Jerky - I grab the beef out of the freezer and have at it.

I am looking at that, It looks like you get a choice of a few items sold in quanity at close to club prices and probably the same sources.

Is it worth it? I would buy a case of pork tenderloins as I live off those but the last 24, 12 2 pks, I bought were .50 less than buying in bulk from them.

Thx. Loved AB back in the day. He taught me how to make a fool proof roux for gravy. And his red wine beef gravy is outstanding.

I've used the same jerky recipe for 30 years and probably won't mess with anything that you'd consider so-so.

Honestly - at first I was dubious when a friend mentioned it to us. He swore that we'd be "surprised" at both the quantity and the quality.

We thought, "What the hell" and ordered the chicken breast. HOLY SHIT!!! I picked them up at the site and was floored. Biggest chicken breast I had ever seen. No GMO - nothing but natural.

One chicken breast can EASILY feed both of us. OK...30 pounds in the freezer. Then, we tried the KC Strips. Same thing - Great quality. 20 pounds in the freezer. They taste GREAT. Next was the burger 90% lean. Outstanding.

Now, we have tried the Ham (for the holidays) they were Smithfield hams and tasted great. Finally, the bacon. OUTSTANDING. Applewood smoked.

Honestly, I don't usually recommend products - but I am absolutely sold on Zaycon. Never thought I'd say that - but there you go.

This is true, but you can still just go by giant chunks of London Broil and make great beef jerky in the dehydrator. Just marinade it overnight in the fridge after you slice it.
