I know they are very common in the South but feel they are an underrated breakfast food.

Tough to beat some cheese grits and bacon.

I don't think I have ever had decent grits. The only times I have had them thwy were remarkably similar to school paste.

Not as big a fan of the semi-solid oeuvre [grits, risotto, polenta, oatmeal, etc] as some seem to be, but grits is the best of the bunch. Especially a good savory shrimp grits.

How to make amazing grits:

Make some grits per instructions on box
Add in a bunch of cheddar cheese and melt it in.
Add in some fresh garlic to taste
Add a bunch of butter
Whisk a couple of eggs and mix with some milk and add to mixture
Pour into greased casserole dish and bake until set.
Top with more cheese toward end of baking.

Really turns out more like a polenta. Can be cut into squares and reheated throughout week with various dishes.

Nah. I eat them plain with salt, pepper and eggs as well. I grew up eating garlic cheese grits as described though. Just had those this weekend actually cooked by my 75 year old mother for my brothers and all our kids.

Moved to Charlotte, NC and worked for Citifinancial. Southern black gentleman that suggested grits and cheese with shrimp to me. Fell in love and never had anything like it since. Have a sad, missing it.

I had some bomb ass Shrimp and Grits in New Orleans a few months ago.

Best grits I make... caramelize sliced onions in butter, add liquid (5:1 ratio liquid to grits, I like milk and chicken stock), slowly whisk grits and cook for 30 seconds. Put it all in a crock pot on low for 4 hours. Finish with butter and season to taste.

Super creamy, no cheese needed.

I really like the tabasco recipe shrimp and grits. It features ridiculous amounts of bacon, but it's damned good.

I should add that I don't prepare the grits like they say, but I do the shrimp per their recipe.

Oh, and I despised grits until June 2014 when I had some stoneground ones for breakfast in Thomasville Georgia. Really creamy and flavorful. So then tried some shrimp and veggie ones for lunch there later too. Also very good. Completely reversed my opinion about grits.

I have never had grits. They don't look appetizing and I'm not one for hot slop to start my morning. My grandma fed me malt-o-meal when I was a kid. I don't know what the fuck that was exactly, but she dumped milk and sugar in it and I remember thinking it was OK.

Same crap, just with wheat instead of corn. It was always forced on us kids, cause it was so good for us. But it had the consistency of baby shit, and tasted like cardboard, so they had to bury it in sugar/honey just to get us to eat it. Kinda cancelled out the whole "It's so good for you" thing...

I don't know about the cream of wheat, but it's almost guaranteed those grits were instant, which are utter garbage. IMHO, it takes someone that's respecting the ingredient and giving it time and love to get good grits. It took me 7 years in the South to find grits that I like, and once I figured out few things, it's easy to get good grits now.

dude, real properly made grits are the bomb.

I don't necessarily know how to make them properly, but whatever they do to them in the south is awesome. I've had them in Mobile, AL and Pensacola, FL and they were kick ass.

I've had them up here in KC, and while they weren't awful, they didn't make me loose my shit like they did down there.

It was so much better when instant came along and you didnt have to start boiling them 30 minutes in advance. Steel cut oats taste to oatie and I am sure steel cut grits taste to gritty. Could not disagree more. Instant oats and grits suck ass. Steel cut are far superior, even if they take a little longer to cook.

I know your thinking geographical but all my travels for work and plenty of it down south or dirty south as some call it there is only one way to tell. If you order 2 chirping bacon toast and coffee and plate arrives with grits you know your in the deep south. When you dont eat them they politely ask was something wrong with your grits? When I politely tell them I don't care for grits you get this look of disgust and who does this damn Yankee thank he is. If you are in the South and they ask hash browns or grits your not in the deep south or in a large southern city.

It's funny because it's true. You could also change out every grit reference in that post with sweet tea vs. tea and it'd be accurate, as well.

There's a scene in the Grapes of Wrath, IIRC, where there's a family of EYE-talians camped next to some hillbillies. They wind up with a brace of rabbits and share 'em out, along with some cornmeal. The Italian mama-mia stews her rabbit up, and makes a pot of polenta to serve w/the rabbit stew. The Hillbilly folks fry their rabbit up and make a pan of good cornbread. They each look over at the other camp and are disgusted that 'those fools wasted that good food!'
Technically, hominy grits - made from hominy rather than 'plain corn' - can benefit folks suffering from pellagra. It's a disease we don't see in the US anymore, it's basically a vitamin B3 deficency. If you turn plain corn into hominy, the process releases some B vitamins - and improves the health of 'peasants' who live on corn, think rural South, or South America. Anyway, hominy exists for a reason and if you don't like it - cool - just remember it saved a lot of lives in the past.

One of the best things I've ever eaten was crawfish etoufee over grits down in Florida. Creamy grits with an insanely deep flavored tomato based etoufee. Holy shit it was good.

We have a local farm and granary that supplies grits to several of the higher end restaurants in Montgomery. They are very, very tasty. I'm trying to find out what kind of corn they are, but they're very comparable to Anson Mills. And since I can't get Anson Mills unless I order online, I'll go for the locals. :)

Try my method for savory grits. No cheese needed, and super creamy. You need real grits (stone ground, preferably), though, none of that instant or "quick" stuff.
