Maybe it's a regional thing. It's always sold in stores around here right beside the nog every Christmas. Home made is better than store bought.

Seconded. I do like the stuff, w/brandy or rum. Bourbon if you have some bourbon that doesn't suit you 'as is'. If you have a party, get some whipping cream and use your mixer to whip it up good, fold that into your home made or store bought egg nog after you've mixed your brandy/rum in, just before serving. Sprinkle w/freshly grated nutmeg and you'll become a legend in your own time. Legend wait for it dairy!

I have one question: Doesn't the dairy go bad? Not the eggs so much but milk and cream? Or does the alcohol preserve it or just hide the rotted milk?

Bacteria can't survive if it's alcoholic enough. So no, it won't go bad. The alcohol preserves it.

I age my egg nog. I make some around Xmas. I use milk cream and eggs from our chickens. Throw in vanilla beans and lots of bourbon (I usually use Wild Turkey 101 or Bulleit) and a bit of rum, usually Mt. Gay or Meyers. Age at least 30 days.

Alcohol kills any germs. Where I live, my garage is cold enough to keep, egg nog at the right temperature. Great part of the holidays. One piece of advice: do not use raw milk, I like the taste of raw milk and drink it when I can but don't use it for egg nog.

It wasn't a full glass. Was just a sample, like 2 tablespoons. I wanted to see how it was coming along. I hadn't tasted it since the 2-month mark.

I like to see how things evolve - it's the same reason I bought like 8 bottles of 2000 vintage port in 2004 and open a bottle ever 2-3 years. It's a lot of fun seeing how things change with time.

I make eggnog for Christmas. I usually age it 3-4 weeks. Not a huge brandy person so I skip brandy and use mainly bourbon with some non-spiced rum, usually Meyers.

Do NOT use raw milk. I enjoy raw milk if I can get it but it gives eggnog an unpleasant Parmesan cheese flavor.

My usual practice is to make it Thanksgiving weekend so I will likely do so in the next couple of days. And I don't really care for nutmeg so I leave it off. I add a split vanilla bean.

Mine worked really well this year. Last year was overpowering. I usually use Wild Turkey 101 as a mixing/cooking bourbon but this year I went with regular (80 proof). I usually do ¾ bourbon and ¼ rum for the liquor part. Never been wild about the brandy. Don't know why. But this year was fantastic. Definitely alcoholic and not for the faint but not overwhelming either.

I don't have the discipline to wait a year. I usually make mine Saturday after Thanksgiving and drink on Christmas. My 2 gallons will usually last a couple of weeks.

It’s time to make Eggnog for Christmas. After much tinkering, here’s my basic recipe:

12 egg yolks
2 cups sugar
4 cups whole milk
2 cups heavy cream
1 750 ml bottle bourbon (I usually use Wild Turkey 101 or Knob Creek 100 proof)
1 cup Myers dark rum
1 vanilla bean
Pinch salt

Mix yolks and sugar with a hand mixer. Split vanilla bean. Scrape paste into yolk mixture. Add 1 cup milk and incorporate.

Put yolk mixture into 1gallon container. Add remaining ingredients, including vanilla bean husks. Mix thoroughly. Age in cool place (fridge or garage if you’re in a northern climate) but don’t let it freeze. Wait at least 28 days, mixing every few days.

I usually make 2 gallons at a time. I like the idea of Kahlua but I usually make this as a base and add Kahlua if I feel in the mood.

This is a variation on Ruhlman’s recipe. Havs enough alcohol that it tastes good and kills germs but not so much that you have to choose between a glass of egg nog and driving.

So this year I’m likely to make egg nog Thursday morning. I’m not cooking this year (first year ini don’t know how many years) and we are going to have a mid afternoon feast at a local fine dining establishment. Hope that the place we are going allows corkage fees because I have a few bottles of 2006 Louis Jadot Grands-Echezeaux that I think are in prime drinking condition.

But that leaves Thursday morning wide open so I’m making egg nog Thursday morning. Better than watching Detroit-Chicago, right? FMB always made egg nog this time of year for Christmas enjoyment so I figured I would encourage others to do so as well this year.
