Started a UDS this morning! Things are going great so far - should get the thing finished tomorrow! Anyone here built a UDS? If so, post some photos! Otherwise - let's talk about beginner meats and temperatures!

a friend of mine built a udf and is looking at a shank hanging, he made a rope sausage but the skin is splitting. he did boil it first

Nice. 19" or the bigger one?
I thought about getting the smaller one, but have heard I should get the larger one if I have the funds. I doubt I'd be smoking large quantities in a single smoke, but would hate to be in a spot where I wish I had more room.
