Hi,

I'd like to know what beans you enjoy? How you make them? What side-items you include. Condiments atop their finished product.

Just go on and on for months about nothing but beans, here.

I love beans and they're super healthy, affordable and act as a virtual meat.

Anyone ever use ham base?

Anyhow - go on about your bean preferences!

Today I'm fixing Great Northerns and Pintos / Medley - Ham hock as well :)

Beans are kinda overrated, they're just kinda there to act as filler IMO

But I do make a killer Mexican style cold black bean dip with cilantro, tomato, onion and corn

They're essential to certain things like chili, but yeah I'm not the biggest fan of beans themselves

Like, when I go to a Mexican restaurant, I'll have a few good bites of the refries but theres always plenty of them left, yet the rest of the plate is clean

Always get the "Soupy" beans. Ask if they have sauce to go with, I've been brought some strange stuff preferenced by; Grandma makes this, it's good with that.

Not sure if they have one near you - but those honey-baked stores often have a deli inside - where you can get a lovely croissant w/ lettuce, tomato and swiss - w/ their own ham (of course) - it's good and their sauces are top shelf! But the retail locations are spotty throughout the USA. :/

I like Italian soups so Cannellini beans both dry and canned are always handy.

I made veggie chili using a bean mix from Bob's Red Mill and after leftovers are frozen they make a great topping for rice or pasta.

Great thread idea. One way I like beans:

Dry pinto beans
Onion
Vegetable bouillon
Bay leaves
Salt

Throw it all into the Instant Pot with a little bit of oil. An hour later they're good to go. Serve with cornbread and honey.

And yes, my crockpot is beat to hell. Gets lots of use and all the cheapest plastic parts [handles, knob] broke a LOOOONG time ago. But it still cooks like a champ.

Mines oval , digital , never goes anywhere, and is beat to hell also. But it works.

It's the weirdest thing. It's built solid. The exterior is stainless steel, and the crock is thick and heavy. But the handles and the power knob were made out of the cheapest plastic you ever saw. Barely one step above the packaging you have to cut from around everything you buy. I still have the pieces in a little box somewhere, but never felt the urge to glue them back together.

I like andouille [sp], but don't think of it as primarily a bean pairing. Beans and rice and okra and tomato, sign me up. If I'm just having a bowl of beans, I'm fine with bacon and onion.

Split Pea Soup, and Black Eyed Peas to start. Regular peas can be added to numerous dishes, or as a snack. I don't remember seeing beans and rice or bean soup as some call it mentioned. Don't forget lentils. On their own, or in a dish. Chick Peas too. So many things can be done with those as well. I once seasoned some and put them on a sheet in the oven

I wont make a pilaf or risotto without peas in it

Peas are ubiquitous in any good Chinese style fried rice

They're awesome cold in a 7 layer salad

Peas with onion rock, the sweet and savory together works perfectly

If I'm making poverty Hamburger Helper of any kind, peas ARE going in that shit, particularly stroganoff

Or you can just have them on the side with just about any damn thing, my freezer is NEVER without a bag of frozen peas... and thats all I have to say about that!

Pretty much, maybe leaning toward Thai. I don't know if it has an official name. I just took some of the things I liked from Indian dishes and slapped them together and like it.

The curry provides the flavor, and the chew of the paneer mixes well with how chickpeas don't turn to mush even when cooked for a long time [kind of the same texture as boiled peanuts].

True. A lot of dishes from East Africa to South Asia, and in between have a lot in common. I doubt that we have enough with curry to get it's own thread

$2 for a pouch. Shelf stable. Makes two helpings when paired with rice.

The Punjab Choley is when I first got interested in Chickpeas over rice with spices.

Hint - They show which pouches are spicy and which are mild by putting a chili on top of the dish [like the red and green ones on the first box].

Looks good, shifting gears here for a minute. I found a pit ham at Aldi for .50 cents per pound. It's what I added to the beans earlier. It was pretty darned good. Aldi isn't so bad these days!

Anybody ever use ham hock in their ham and beans? how's the meat? That video recipe in the op looks good but I've never hocked.

i do here. quite common to find split pea soup with ham hocks. the only thing i don't like is the skin from the hock and the fattiness, and there isn't as much ham either. :D

And yes on skipping the celery. I love it raw but like peas, carrots, etc.can't deal with it cooked. I'll cook with them to get the flavor in the dish but won't eat them.

Family likes beans, so if any of us find some on closeout or on sale, we buy as much as feasible and put them up in the pantry. I have like a couple dozen cans stocked up at the moment.

Always something handy when you don't feel going out and shopping.

Great point, we do on occasion have Navy beans, Pinto beans and I agree on the onion. The newness is wearing off of the black beans, so I will probably start alternating more often.
I froze a bunch of Jalapeno and chilli peppers last fall from our garden and I add as many of those as the Mrs. can tolerate.

I don't salt anything, and last time I checked bullion, I think it was pretty much straight sodium.

Sodium is being shoved down our throats, almost unavoidable, but I don't want to jump on my sodium band box and hijack your thread.

The Mrs. loves them and mixes them with corn and milk. I believe she calls it suckotash or something like that. I don't go out of my way to cook them very often.

You might try the baby frozen ones, they don't taste like wet cardboard like the canned ones.

I really hesitate to introduce any negativity, but I really can't eat "baked beans". The Bush beans style from a can. I feel like many children grow up and develop an aversion to beans because their mom put that garbage on the table on a regular.

If given the option, you always chose bone-in.

I'm OK with pinto and black refried beans. I do enjoy red beans and rice in moderation. I love beans in chili. BBQ beans are good.

We make a ham and bean soup whenever we have had a bone in ham. Throw the ham bone and leftover meat, some onion and a pound of soaked dried beans (I prefer black eyed peas) in the crock pot and let it cook on low all day.

Baked beans is a food group all on it's own. So good. So many recipes representing different geographical regions they could fill a thread by themselves.

I eat this 4 or 5 days a week, I call it 'dal' based on Indian curried pea dishes but it may not suit dal purists. Here's what I do - 1 lb of dried peas (picked over for pebbles, etc) I buy yellow split peas @ Hy-Vee because I like the appearance better but there's no diff. in taste if you use split green peas. Add 1 box (2 pouches) of dry onion soup mix - I use Aldi brand, it's cheap. Put this all in a crockpot, add about 8 cups boiling water/set the pot on hi & cover. First I add 1 TBL thyme, 1 tsp. cumin seed, 1 tsp. crushed red chile, 1 tsp garlic powder. 2 TBL olive oil. Crockpot on hi for 6 to 8 hours (or on 'medium' overnight) Now I add 1 can chopped green chile, 1 can 'ro-tel' tomatoes w/green chile, 1 can rinsed chickpeas or other canned beans, 1 can cooked spinach, 1 can chicken broth - 1/2 cup 'quick' barley. Stir well to blend and simmer for another 3 or 4 hours if you have time, or til hot enough to suit you if you're starving (give the barley time to cook).
I put 2 cup servings in glassware and carry to work, reheat and eat w/a shot of Rooster hotsauce. Lots of fiber, protein, flavor. Pretty cheap for the good you're getting.

Total Fat 1 g Potassium 710 mg
Saturated 1 g Total Carbs 32 g
Polyunsaturated 0 g Dietary Fiber 12 g

They're in a bag, meant as a snack, hanging in a store. Kind of like potato chips. These really aren't like Corn Nuts.

This is my go to bean recipe that I used to enter into BBQ comps as a side dish.

Fry up a half pack of bacon and chop it up into pieces to add later. Put one can plain old van kamps pork and beans into a pan with 2 cans pinto beans, 1 can butter beans, one can red kidney beans, and one can white kidney beans or navy beans, and one can butter beans. Fine dice up one red pepper and one green pepper and one onion and put in the pan with the beans. Add the bacon. Add in 3 cups brown sugar, 1/2 cup worchestershire, 1 cup ketchup, 1 tablespoon louisiana hot sauce, salt and pepper to taste.

Now, if you are smoking a brisket, simply put the pan under the brisket, smoke the beans for 3 hours, let the brisket juice drip into the beans, then add some chopped brisket at the end of the cook. If you are just making the beans, then add one or two tablespoons of liquid smoke to the beans, and put them into the oven with some chopped brisket (available at most grocery stores) and bake for 3 hours.

I've added some mustard or vinegar to them as a change and really like it that way. Just about 1/4 cup would do. If you need a bit more salt, add some soy sauce. It adds nice depth to it also

If you like yellow mustard you are missing out but I understand the hesitation as I remember the first time I heard about it I was like WTF?

Have not tried that kit though admittedly I don't cook much.
That said, I do have a nice pot of chicken and rice with cheese and broccoli going right now.

I usually mix a can of:
Black beans, red beans, blackeyed peas, kidney beans and pintos. Add a can of rotel, a fuckton of bacon, salt pepper garlic and put on grill for around an hour or so. I like that way better than baked beans.
