There's a difference - a rather large one - between being an undersized S who makes his mark by being tough and smart, and being a big, strong, physical DT who is stronger and more athletic than basically everyone on the field.
Even aside from the fact that him not playing at his best costs him money this year and in future earnings. He has every reason to kick as much ass as he is capable of kicking.
And Joe Cullen is the DL coach. Jones and his teammates on the DL love this coach and appreciate his intensity and how he handles and motivates players.
