The Chicken-n-Dumplings are a family tradition that was in place before I was born. Everyone seems to like them more than about any other dish at Thanksgiving. In our household I have taken over the honor of making the dish from my mom's recipe. May she rest in peace! I boiled my chicken last night and I'm about to pull the stock out of the fridge and get busy with it. Sadly I can't ever make enough to have much leftovers because everybody eats them all up.

Do twice baked potatoes instead. Bake large potatoes, cut in half lengthwise and hollow out like canoes, make high end (tons of add-ins) mashed potatoes out of what you carved out, fill the hollowed out potato canoes with that, put cheese and bacon on top and bake again until the cheese is melted, top with green onions and sour cream.
