It's closed now, but damn that was good stuff.

The man that invented the cashew chicken most of us think about ran that place. He retired, as I understand it, and gave the place to his son... who ran it into the ground.

Basically, it's just fried chicken (marinated) covered in a brown cashew sauce. That's all I ever get.

If a Chinese restaurant doesn't have Springfield style cashew chicken, I won't go there.

However, the BEST I've ever had was at the House of Chow in Columbia (Broadway and Stadium).

Southern Fried Chinese ... Chicken nuggets deep-fried in a duck or thick wonton sauce substance. Served over rice. And yes it is delicious with all white meat.

Actually, yes I have seen it served on the menu in Oklahoma, Illinois, and Arkansas. They had the traditional cashew chicken and right below with an asterisk ... also served "Springfield Style"
