Desano Pizzeria Bakery. Wood fired pizzas. Flour and sauce from Italy, along with ovens. Strict rules in which to make the pizza. So in the late 80s, an elite Italian organization, Associazione Verace Pizza Napoletana (VPN), was formed to ensure that this centuries-old craft was protected and that all pizzerias adhered to their strict regulations when creating authentic Neapolitan pizza. From the hand-kneaded dough and imported ingredients to the special wood-burning ovens and highly trained Pizzaiolas (master pizza makers), only a few pizzerias, like DeSano Pizza Bakery, follow the Associazione Verace Pizza Napoletana’s guidelines when crafting Neapolitan pizza. https://www.zagat.com/proxy/v1.4?m=i...a4db331422c98b |
Back in the 70s there was Bandera's Pizza about 3 blocks east of Chase Park Plaza in St. Louis Missouri. It was in the basement of a house, had a "C" health rating, and was always packed. You would see people wearing anything from a Tux to shorts at the same sitting. If you asked anyone that had eaten there they would all say that it was the best pizza they ever had. My friends and I never went anywhere else for pizza. It was the so called St. Louis style. Thin crust with Provel cheese mozzarella optional. I know that this will disqualify my opinion but my favorite pizza was salami and sardine.
