Any one at the BBQ Contest at the Woodlands this past weekend? I got goat-roped into competing on a team. It was pretty fun, although I got cooked my own self, in the sun.

Oh I know, I'm just saying that these threads normally get some really great posts, but then fade into obscurity. It's great if you see them in the first place and remember the thread title, but if your memory is as questionable as mine, or you don't see it in the first place... well you get the picture.

Outside of real football threads these types are my fav. Hell who needs all the geopolitical crap anyways "JMHO". Whats better the Chiefs football and BBQ? Just a thought.

Brush full slices of pita bread with olive oil, grill on low heat for a couple minutes, sprinkle with grated cheese, or dip in hummus. Very easy and quick.

Yea, I've seen it, heard of it, just never knew what it was.

And to be honest, chickpeas and tahini doesn't clear it up much.

Uncle Mike's breakfast Surprise.

very good for camping.

1 large skillet on open fire
brown lb of sausage
brown hashbrowns in same pan
Pour in Scrambled eggs and stir into other ingredients
Stir in 1 container of sour creme, season with salt, pepper and whatever else you feel the need to have.

Serve in torilla...feel free to add salsa, sour creme or chopped tomato.

catfish gumbo

i just buy the roux in the box.

tricks-add oleo even if it says not to.
bring roux to a boil and reduce heat to slight boil for 10-15 minutes.
mix thickly chopped okra,zuccini,yellow squash,broccoli,and 3-4 jalepenos. let simmer for 5-10 minutes depending on how big a pot youre making.
add 2-3 pounds catfish chunks cook for another 7-10 minutes.


serve w/ liberal amount of cornbread and hotsauce......
mmmmmmmmmmmmmmmmmmmm.

if you add your vegis to the roux right off the bat theyll get soft. Ive been screwing w/ this all spring. ive got a etouffe recipe on here somewhere.

I'm heading to the store to get the ingredients for jspchief's armadillo eggs. They sound great. I wonder what I should have with them. Any ideas Jspchief?

I usually make them as an appetizer, so what I have with them is "dinner" :)

You'll probably have some sausage/cheese mixture leftover. You can mix that with some pizza sauce for an italian sausage sandwich.

Remember that cleaning the seeds out is what controls the heat. One or two seeds can make the difference between hot, and mild.

ROFL I kind of figured you made them as an appetizer. I'm just debating on if I should make up some hamburgers or a steak... I guess it doesn't matter. Thanks for the heads up on the seeds. I'll be sure to get them all out. I don't mind a little heat but the girlfriend doesn't.

They are pretty heavy fare, so I wouldn't plan on anything huge to accompany it. 2-3 of them could almost replace the meat serving of a meal.

If you remove all of the seeds, and rinse them out, they shouldn't be hot at all.
