Its gonna sound stupid, but Pizza Hut has the best wings I've ever had

The fat is almost completely rendered, and the meat practically falls off the bone... but their prices are absolute murder, a little over a buck a wing iirc

Frying wings is a gigantic pain in the ass, right?

But there's an alternative that works pretty well to give you that rendered fat - you steam them first. I haven't done it in a bit because I usually only grill mine now due to simplicity, but if you steam about a dozen of them for about a half an hour - 45 minutes, it renders the fat out of the wings. Then you put them on a raised drying rack over top of a cookie sheet and bake them about 450-500 degrees (ideally a convection oven) and they'll get as crispy as they will when deep fried.

You have to clean the steamer and they take a little more time, but they're damn good.

Makes sense - reminds me of how dry you must get scallops before you sear them - to avoid virtually boiling them. Good tip...

More seriously, I've never had 'great' wings. I've had great chicken, and I've had plenty of decent wings. But I've never sought out or experienced any place that takes immense pride in their wings.

I view it at relatively cheap, reliably tasty, and hard to **** up.

Probably my favorite sauce is Mango Habernero at B^3. Boneless unlimited $.50 Wednesdays.

J.R. Crickets - Sure! I've been there -but it was literally like 1992ish when there was one on Indian Trail - they're now all down south. BTW do you realize who that rapper is? Paperboy?

Yep, I would rather take a chance on some random greasy spoon that has wings on the menu than Buffalo Wild Wings. I have experienced two of them and to be honest, it's about as bad as it gets.
