It was OK. Frying chicken is hard....I undercooked it a little.
The rinds work as a sub, though. Just take your chicken and roll it in the rinds, roll it in an egg wash, and then repeat until you get the desired thickness of coating. Set the chicken aside for 15 minutes or so and let the coating set. Once your oil is heated, lower it in and cook each piece for about 8-10 minutes. I did about 5-6 and it was definitely undercooked. |

I'm getting faster. Not sure how or why. Maybe it's the weight, maybe it's conditioning, maybe it's the weather. This morning was 10 run, 3 walk, 10 run, and I covered 1.09 and 1.14 miles in the two 10-minute intervals. Which is 2.23 miles combined in 20 minutes, under 9 minutes/mile. I felt really bad this morning, too. :shrug:
I've been doing so many miles the last few weeks that my blisters have blisters. Total of 175 miles walking and running combined since June 17th. 9.7 miles/day. I keep telling myself I should take a day or two off, but every morning I get up and feel like going out. |
