Whoever mentioned floating the Elk needs to get their head checked. Drive the extra distance to hit the Buffalo in Arkansas. If you go during the wet season you can float the upper and have some fun in the Class II and sometimes Class III rapids. The middle can be floated year round and is mostly Class I with the occasional Class II like the Current river in MO.

There are some awesome places on the river to setup camp.
