Naptown Chief sent me that helmet - he's one of the nicest posters on CP.

Actually, it's called a frittata.

With the helmet, maybe it isn't as big as it looks.

no it's pretty thin CD - just a nice little thing to have put back to eat on over the next day or two - there is only about 7 large eggs :)

Buzz 12-31-2013 12:12 AM

I call it an egg casserole.

My wife makes a breakfast casserole:

crumbled bread
eggs
diced onion
mushrooms
spicy sausage
cheese

Yours looks similar minus the bread. I need to get her to make it without the bread.

One of our weekday dinner staples is a creation I call eggthing.

1. make hash browns in a large skillet
2. when hashbrowns are almost done put some sharp cheddar cheese and ham on top of half and fold over.
3. add beaten eggs to the side of the skillet vacated by the folded over hash browns, cook as scrambled eggs
4. when the eggs are just about set, mix all that together.

Season with salt, pepper, catsup, sriracha or whatever floats your boat.
