The whole point is that he's transforming food so that you're like, "WTF is this crap? That's not food!" then you eat it and are completely blown away by the flavors. If you're actually interested in what Noma is all about, check out Bourdain's entire episode on Noma. It's on Netflix. This guy is doing insane shit with food. There's a boat in the harbor in Copenhagen that's known as the "food lab." They do insane shit like fermenting food for like 3 months just to see what it tastes like.
