I also had trouble keeping a steady temp on an unusually cold Louisiana morning. Started smoking at 6:30 am, and it finally just got to internal temperature about an hour ago. Somehow though, the outside was charred and almost inedible.

I've never smoked something that big. I mainly stick to ribs. I've done brisket a few times. But never turkey. Inexperience probably killed me.

Also, is there a such thing as too much smoke?

Ah, next time wrap it in foil when the color is where you want it. And yes, too much smoke will make it taste bitter. I usually stop adding smoke after about 2 hours

You know what. I thought about both of those things, because I do both of those when smoking other things. Problem is, I followed an online guide for this turkey because it was my first. I wondered why they didn't mention either of those things, but went on with their instructions anyways since I figured they knew what they were doing. Next time I'll trust my instincts. Not sure whether to chalk that up to inexperience or lack of confidence, but lesson learned either way. Thanks for the advice.

I know it's early, but I gotta get menu planning. One of my wife's favorite holidays is Thanksgiving (she's part Hobbit, so she digs the food), and her birthday is two days later. She's informed me she doesn't give a crap what else is on the menu, as long as there's mashed potatoes and stuffing.

So I've got those covered - every year, though, I tend to tweak the stuffing. Last year was best yet. ****, I have to remember what I did.

I may buy a BGE. If I do the missus wants a turkey done on it. If not Ill do the Weber bird, we will have dressing, sweets and whites, probably pumpkin pie....green bean casserole...all for for people, one losing weight and two who damn sure need to. Wine and after the feast, a touch of scotch.

And just because it can't be said enough...

Can't have a proper food coma without them. Plus, that gif reminds me of FMB when he was but a young poster here.

Ha, that subject had already been covered in here. And I'm nothing if not consistent.
