Phob, what could a guy use if he don't eat pork? What would have a similar but good flavor?

You could also try to find a beef chorizo to substitute I guess. Never tried it but I'll bet it would work.

Blackened Tilapia over Yellow Rice topped with Browned butter (google it)

Western Chicken - Grilled Chicken brushed w/ bbq topped with crispy bacon, scallions and tomatoes with Cheddar/jack melted over it.

Hootie said if Huard shit on a shingle and you grilled it, he'd take it to the park and picnic in gaiety-bliss...

Just finished a batch of jambalaya using the above recipe. That Phobia is a genius.

Here's a quickie that'll add some POW! to your meal:

Get a Boston butt and baste liberally with about a quart of anti-freeze. Place on grill, then kiss your butt good-bye!

Rinder Rouladen (Beef rolls)

Ingredients:

Thinly sliced beef steaks (as large and thin as possible, preferably 1/4 inch or less)
Whole dill pickles sliced lengthwise into 1/8ths
1 diced onion
spicy brown mustard
salt
pepper
1/4 cup vegetable or olive oil
3 cups beef broth
1/4 cup tomato paste
1/4 cup half and half
1/4 cup milk

Trim all fat from steaks and pound flat with a tenderizing mallet. season meat with salt and pepper on both sides. Spread a thin coat of mustard on 1 side of each steak. Put 2 pickle slices in each steak. Divide onion evenly on each steak. Roll tightly from narrowest end and secure with sewing thread. Heat oil in deep saucepan and brown meat rolls on all sides. Add a cup of water to saucepan and simmer meat rolls for 1 1/2 hours (add more liquid if needed, turn rolls occasionally). Remove meat rolls. Add beef broth to the liquid the meat was simmered in. Boil until the volume is reduced by 1/3. Whisk in tomato paste, half and half and the milk. Heat (but don't let it boil at this point). Season with salt and pepper to taste. Return meat to liquid and warm for 2 hours in sauce.

Serve with boiled and peeled potatoes and green beans. To serve, place meat and potatoes on plate, remove sewing thread from meat rolls and ladle sauce over meat and potatoes. Add veggie and VOILA!

Enjoy.

Thanks for the recipe. I will give this a try...

I need a recipe for a flank steak. Anyone got a good one? I've done the soy, sesame, orange rind marinade before but I'd like to mix it up.

Two easy recipes we've always done. Nothing fancy.

Soy Bacon Wrapped Shrimp.

Just marinate the shrimp for 5-10 minutes in soy, wrap with bacon, skewer and grill. Finish with sesame seeds. You could also add a splash of sesame but use sparingly.

Maple and Red Pepper Flake Pork Tenderloin

Mix maple syrup (good brand, no Mrs. Butterworth's), crushed red pepper flake (to desired heat level) and olive oil. Marinate pork, usually overnight. Grill but watch pork since sugars in the syrup can tend to burn.

YOur mom is like corned beef...her recipe is hard to make due to lack of enthusiasm of the parties involved and her beef curtains will need days of tenderizing.

Here's my secret bean soup and ham hock recipe from stalag 17

* 8 cups water
* 1 pound Great Northern beans or navy beans
* 2 cups cubed ham
* 1 ham bone or ham hock, optional
* 1/2 cup chopped onion
* 1/4 teaspoon pepper or to taste
* 1 bay leaf
* 1 carrot, chopped
* 1 rib celery, chopped or sliced thinly
* 1/2 teaspoon salt
* 1 can (8 ounces) tomato sauce

Bring water and beans to a boil; boil 2 minutes. Remove from heat, cover, and let stand 1 hour.

Stir in ham, ham bone or hock, pepper, bay leaf, carrot and celery. Bring to a boil; reduce heat, cover, and simmer until beans are tender (skim foam from top), about 1 1/2 to 2 hours.
