Crappie/panfish recipes???
 
Had a big mess of fish given to me. Id like to do it up for fathers day. Gonna have it with some fried wild turkey breast, & balls.
Little help cause i dont know if its better fried of grilled.

Cornmeal-based frying is best for crappie, imo.

I do 1/2 cornmeal 1/2 flour. Cornmeal is a little too coarse by itself.

I just do an egg wash followed by the flour/cornmeal mix with salt and pepper. Simple but delicious.

1 1/2 cups of yellow corn meal
1 egg
1 cup of milk
salt and pepper
6 or 8 crappies fillet
Peanut oil for frying

Soak fish in milk for 1 hour (takes out fishy flavor). Remove the fillets from milk Sprinkle with salt and pepper and then roll the fish in corn meal. Drop the fillets into a deep frier and cook the fish until it floats.

its because theyre balls. I tricked em into tryin em lastyear and when i told em what it was they got the gag face.

pretty much the way i do catfish.

i ilike that half & half. makes a wiched good fried chicken coating.

The cornmeal one above sounds just fine, but my favorite by far is the Lousiana fish fry.

you guys ever used evap. milk? would butter milk make the fish fall apart?
