What foods do you love that other people under rate?

I'm rolling with a good hearty salad with lots of different types of vegetables.

Bread and Gravy!

My wife can pan fry a mean chicken but always makes too much Gravy and not enough potato. So I do like my dad did tear up a couple slices of bread and pour chicken gravy.

Its Good Chit Maynard.

Fire Me Boy! 06-16-2014 08:35 PM

Sandwich/hamburger bread and pizza crust. They are the foundations of their respective meals, and subpar foundations can utterly destroy an otherwise finely crafted dish. For me, the bread and crusts are the most important pieces.

Fire Me Boy! 06-16-2014 08:37 PM

Generally, sauces. A good sauce can tie an entire dish together and define the experience. It's also an art that takes a lot of practice to really master.

I prefer the gizzards, but like livers a lot as well.

Lasagna. It's a very unassuming dish, but it's the perfect combination of meat, sauce, cheese, and pasta. And it's one of my all time favorite dishes.

Excellent choice. I imagine it's not more popular because people don't go to the trouble of getting it properly crispy.

Perhaps the one dish I properly enjoy WITH ketchup.

Another, great northern beans. Slow cooked with bacon and onion, sprinkle tabasco on a bowl right before consuming with corn bread muffins made with sour cream instead of milk or water.

The British are behind it. They have a way of naming gross...like one having suet ( beef fat ) in a desert.
As well as no so gross foods. British plum pudding has suet in it too.

Totally with you on green onion and shallots. And instead of black pepper, I'd say white pepper and grains of paradise. Ever put grains of paradise on a steak in place of pepper?

But I can't stand cilantro, not sure if maybe I'm one of those that have the cilantro hate gene.

Yes, yes, yes on the white pepper. I love that stuff. Especially in French dishes; in home made salad dressing. Grains of Paradise can even go in apple pie.

Another ingredient is Herbs-de-Provence. Also great in a homemade salad dressing with white pepper.
But has many other uses.

BucEyedPea 06-17-2014 08:20 AM

White Balsamic Vinegar

Man I love this stuff for making salad dressings. It's much lighter than that darker balsamic.

You eat yucca? I have a whole pasture full of the sons of bitches you can have for free. Farm fresh and totally organic,

Unless it's some fancy shit I've never heard of.

I don't generally eat Mexican, but if I do I prefer a burrito.

And it's very easy when you hate the stuff. I honestly can't think of a single ingredient I hate more. Maybe blue cheese, but it'd be close.

Freshly grated is a bit too tangy for my taste buds, especially for the dishes I like it on. I prefer the non-fresh. I think it enriches and mellows the flavor at the same time. So long as it's not too old. I also prefer parsley dried unless a recipe calls for it otherwise.

I buy the herbs and spices I don't grow bulk dried at the whole foods type grocery. Even though, dried they are not old and stale and I can buy in smaller batches so I don't wind up using something old and out of flavor. Cheaper too. I mean, some spices I may use once or year or in a lifetime. I hate spending $5-$7 bucks for a jar at the supermarket when most of it will go to waste.

Some people literally can't help but hate it. Something like 13-15% of people will perceive cilantro as "soapy" tasting. It's biological.

I thank the heavens every day that I'm not one of those people, because cilantro is incredible.
