I just made a pot of Chili
It smells so good I cannot believe it. Penzeys spices rock.
Something to calm the souls and reduce the angst among us all. |

Thawed some deer burger for chili tonight..... I thought it was pretty good weather for it.

Try making your own chili spices. It's actually easier than you'd think, and it's very rewarding....

I need the thaw some ground venison... my chili kicks ass. It's one of three recipes I will not give out. If I never have children, on my death bed I will give it to the youngest male there.

I share a good recipe cause its just makes me think its ok for others to enjoy the good stuff.
Chili-Good Basic Stuff 2 pounds ground beef 3TB Vegetable oil 1 Medium Onion 1 Red Bell Pepper-chopped 3 Cloves Fresh Garlic-minced ˝ tsp fresh ground black pepper 1 tsp Cumin ˝ tsp ground Chipotle pepper 1 tsp crushed red pepper flakes 3 Tablespoons Chili powder 3 cups water 1 26 ounce can Tomato Puree 2 16 ounce cans chopped tomatoes 2 16 ounce cans kidney beans-drained 2 teaspoons salt Brown the beef in two batches in a big soup kettle. Drain fat and set meat aside. Sauté onions in oil for 4-5 min, don’t brown the onions. Add the bell pepper and continue to cook3-4 minutes. Then add garlic and cut heat. Add black pepper, cumin, chipotle, chili powder and red pepper flakes and stir into onion and peppers. Return to heat and add 3 cups water, tomato puree, crushed tomatoes, the juice from the tomatoes kidney beans and salt. Stir in the beef and bring pot to a boil. Reduce to a simmer and cook for 3 hours. Chipotle peppers are available from Penzeys Spices |

The beautiful and witty Mrs. FAX has another of her frankensteinish experiments going on in the slow cooker.
Red onions and jalapeno peppers on the bottom, then a pork loin dry-rubbed with cumin, paprika, salt, pepper, and chili powder, all that covered with fresh chopped tomatos, broth, and the juice of one fresh lime. It's been cooking all day and smells like an Hungarian bath house. She says she's serving it on tortillas with cilantro and sour cream. Blech. FAX |

I'm lazy, the only thinkg I do right is the spices, I also use Penzeys.
2 cans of Bush's chili starter 1 can of black beans drained 2 lbs of ground chuck 16 oz tomato sauce 16 oz water 1 jar salsa spices. |

Thats why people who have really great meat markets in their area should see how fortunate they are. Its worth the drive from KC to Peculiar to get great fresh meat from a real live honest to goodness butcher. We never get anything from Cass County Meats that we are not totally thrilled with. |
