I just made a pot of Chili

It smells so good I cannot believe it. Penzeys spices rock.
Something to calm the souls and reduce the angst among us all.

Mr. Flopnuts 01-08-2008 04:46 PM

Are you annebriated?

Stewie 01-08-2008 04:47 PM

That's all I use... and they do rock!

Thawed some deer burger for chili tonight..... I thought it was pretty good weather for it.

Fish 01-08-2008 04:54 PM

Try making your own chili spices. It's actually easier than you'd think, and it's very rewarding....

Fire Me Boy! 01-08-2008 04:57 PM

I need the thaw some ground venison... my chili kicks ass. It's one of three recipes I will not give out. If I never have children, on my death bed I will give it to the youngest male there.

HonestChieffan 01-08-2008 05:00 PM

I share a good recipe cause its just makes me think its ok for others to enjoy the good stuff.
Chili-Good Basic Stuff

2 pounds ground beef
3TB Vegetable oil
1 Medium Onion
1 Red Bell Pepper-chopped
3 Cloves Fresh Garlic-minced
˝ tsp fresh ground black pepper
1 tsp Cumin
˝ tsp ground Chipotle pepper
1 tsp crushed red pepper flakes
3 Tablespoons Chili powder
3 cups water
1 26 ounce can Tomato Puree
2 16 ounce cans chopped tomatoes
2 16 ounce cans kidney beans-drained
2 teaspoons salt

Brown the beef in two batches in a big soup kettle. Drain fat and set meat aside. Sauté onions in oil for 4-5 min, don’t brown the onions. Add the bell pepper and continue to cook3-4 minutes. Then add garlic and cut heat. Add black pepper, cumin, chipotle, chili powder and red pepper flakes and stir into onion and peppers. Return to heat and add 3 cups water, tomato puree, crushed tomatoes, the juice from the tomatoes kidney beans and salt. Stir in the beef and bring pot to a boil. Reduce to a simmer and cook for 3 hours.

Chipotle peppers are available from Penzeys Spices

Sounds good. I love chipotle in chili.

As you know, I share many recipes... I'm very open with my cooking, but there are three things I just won't share. It wouldn't be special if anyone could do it.

:D

They are my venison chili, my BBQ beans and my lasagna.

HonestChieffan 01-08-2008 05:17 PM

My beans would kick your beans candy ass. And no I do not give that out. Come to think of it my lasagna will kick your lasagnas butt too.

So there.

Gotta be careful... too spicy ruins the chili.

The beautiful and witty Mrs. FAX has another of her frankensteinish experiments going on in the slow cooker.

Red onions and jalapeno peppers on the bottom, then a pork loin dry-rubbed with cumin, paprika, salt, pepper, and chili powder, all that covered with fresh chopped tomatos, broth, and the juice of one fresh lime. It's been cooking all day and smells like an Hungarian bath house. She says she's serving it on tortillas with cilantro and sour cream.

Blech.

Sounds incredible and almost a Cuban style. Id like to kill the person who decided cilantro needed to be added to many foods. He is the demon and is related to the same lamebrain who decided good chocolate stuff need to be polluted with rasberries.

A tiny bit of cocoa goes real nice in chili... so does a little cinnamon.

blech? Thats sounds pretty damn tasty to me.

though I would definetely use soft corn tortillas, and probably no sour cream. Maybe squeeze some lime on the meat just before eating.

On a related note, I would advise AGAINST squeezing some lime on your meat just before beating.

Tomato sauce don't belong in chili. Just sayin'.

Chopped tomatoes are OK, but sauce... that's a no-no for me.

Correction. For some reason, she says it isn't sour cream, it's yogurt. Plain ol' yogurt.

Double blech.

Although.... I'm thinking about it.... Wendy's burgers might make a sloppy, greasy kinda chili that would be good for is purpose.

Some people use yogurt as a healthy alternative to sour cream. I'd just leave that out.

Ground beef isn't as good as chili meat.

serving this chili since 1969, he year the first Wendy's opened
its doors. Over the years the recipe has changed a bit, but
this version here is an amazing copy of the version of chili
served in the early 90's. Try topping it with some chopped onion
and cheddar cheese, as you can request in the restaurant.

2 pounds ground beef
One 29-ounce can tomato sauce
One 29-ounce can kidney beans (with liquid)
One 29-ounce can pinto beans (with liquid)
1 cup diced onion (1 medium onion)
1/2 cup diced green chili (2 chilies)
1/4 cup diced celery (1 stalk)
3 medium tomatoes, chopped
2 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoons black pepper
2 teaspoons salt
2 cups water
1. Brown the ground beef in a skillet over medium heat; drain off
the fat.
2. Using a fork, crumble the cooked beef into pea-size pieces.
3. In a large pot, combine the beef plus all the remaining ingredients,
and bring to a simmer over low heat. Cook, stirring every 15 minutes,
for 2 to 3 hours.

Makes about 12 servings.

Tidbits
For spicier chili, add 1/2 teaspoon more black pepper.
For much spicier chili, add 1 teaspoon black pepper and a tablespoon
cayenne pepper.
And for a real stomach stinger, add 5 or 6 sliced jalapeno peppers
to the pot.
Leftovers can be frozen for several months.

You let out the "finger"

Dang it!

Fire Me Boy! 01-13-2008 01:48 PM

I just took my "special" chili off the heat.... damn it smells good in here!

Hoover 01-13-2008 03:06 PM

I'm lazy, the only thinkg I do right is the spices, I also use Penzeys.

2 cans of Bush's chili starter
1 can of black beans drained
2 lbs of ground chuck
16 oz tomato sauce
16 oz water
1 jar salsa
spices.

People just don't realize what a difference fresh ground meat makes. Processed grinds at the grocery don't cut it. It's especially useful if grinding different cuts together (beef/pork/poultry). Recipes always turn out better when ground together rather than mixed after the fact.

Thats why people who have really great meat markets in their area should see how fortunate they are. Its worth the drive from KC to Peculiar to get great fresh meat from a real live honest to goodness butcher. We never get anything from Cass County Meats that we are not totally thrilled with.
