Wow!.... While my house is being prepared for us to move into, we are still living in Fariba's town house. It has a small backyard that shares 3' tall fences with the two neighbors. The one right off the sliding door to the backyard is visible from the sofa. As I was sitting on the sofa I had to call Fariba to quietly come over and watch a big Hawk that had just landed on the fence facing our backyard. As she was doing so another big Hawk landed and perched almost shoulder to shoulder to the other one. Together they stayed there in that position for a good 10 minutes. I think they finally saw me trying to go for the camera to take their pic. My movement, as stealth as I thought it was, alerted them and they flew off. But WOW, somehow I feel very privileged!

Just thought I share.

Roast Sticky Wild Hawk-Rotisserie Style

Ingredients
  • 4 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon white pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 onions, quartered
  • 2 (4 pound) whole wild hawk

Directions
  1. In a small bowl, mix together salt, paprika, onion powder, thyme, white pepper, black pepper, cayenne pepper, and garlic powder. Remove and discard giblets from hawk. Rinse hawk cavity, and pat dry with paper towel. Rub each hawk inside and out with spice mixture. Place 1 onion into the cavity of each hawk. Place hawks in a resealable bag or double wrap with plastic wrap. Refrigerate overnight, or at least 4 to 6 hours.
  2. Preheat oven to 250 degrees F (120 degrees C).
  3. Place hawks in a roasting pan. Bake uncovered for 5 hours, to a minimum internal temperature of 180 degrees F (85 degrees C). Let the hawks stand for 10 minutes before carving.
