Hi Guys,
Explain to me what was so damned special about the best buffalo wings you've/you'd ever had/tried. -Where was it? -Do you prefer a smaller wing or big fat wings? -Any good blue cheeses or ranch dressings? -Do you order regular or tell them 'extra crispy?' -Flat or drum? -I'd like some details. -Drop links and pics... -Do you like wet-naps, cloth or standard dinner napkins? -Any beverage you prefer with wings? -How many can you eat? ....What about the sauce ATOP the wings? |

Wing Stop has the best wings although I prefer lemon pepper and atomic to buffalo.

Little lakeside bar in Upstate New York on Lake Chautauqua, can't remember the name of the place...this was with my soon to be wife over a decade ago. Probably the setting and circumstances that made them wings taste out of this world. The drinks were really good too. :)

I'm a flat guy; crispy (skin only; no breading) with plus heat and ideally a hint of garlic. Size wise, they have to have the right surface/mass ratio. Too big and you end up with bites that have no skin. Too small and you have all skin bites with no chicken.
I'm a pretty big fan of CJ's Wings in Columbia; they make their own sauce so while it's still a basic Louisiana hot sauce style, it's not that overly vinegar Franks foundation that most places have. I've found places that make what they call 'wrecked' wings that are essentially double fried and the texture on those can be fantastic, but too many of them half-ass the sauce and just douse them in Franks with some butter. Franks has gotten so common at this point that if I'm looking to buy wing sauce, I'll just get some Otts Wing Sauce instead - at least it's something slightly different. |

Best wings I’ve ever had in my life were from a place called Jolly Mons. Dry rub Jamaican jerk wings, so perfectly seasoned they needed no sauce. Very tender like smoked wings. Man I can taste them now!

Whole wing, drum and flat connected
Wet, buffalo sauce Blue cheese w/ celery Wet nap or a minimum of a paper towel roll Beer, preferable an IPA I don't really trust places that offer a bazillion different flavors. Just give me your buffalo sauce, no mild version, no spicy version, just the one you're known for. My favorite, although they've dipped a bit in quality over the years, is still The Peanut in KC. 3 wing (really 6 because they're whole) and a cheese fries combo is the perfect lunch. |
I'm not a huge fan of buffalo sauce. usually too tangy for me (I don't like tart or tangy to begin with).
usually make them at home; fry them up, the coat in whatever sauce I'm interested in at the moment. Ranch. the end. haven't had much luck with wings at restaurants. They've always been 'ok', I suppose. But nothing to lose my mind over. |

I'm not an advocate of Atlanta restaurants - but they do wings VERY well down here.

But, any wings up around that area is going to be at least decent. Kind of like BBQ down here.

A lot depends on who's in the kitchen. I lived next to the downtown Peanut for years, and some years they were better than others even though the ingredients were the same.

I like Buffalo wings. With blue cheese. Naked with no breading.
Jerk wings are good too. I don't really get into other flavors of wings. If I'm hungry for wings buffalo is what I'm hungry for. Side note to anybody who likes to make your own wings. If you can find it, try Cookies Wings and Things. Very good buffalo sauce already made. |
Also, I never order wings blind. The place either has to have a reputation for doing them well or come recommended by someone I know. There's too many shitty wings out there.

The fat is almost completely rendered, and the meat practically falls off the bone... but their prices are absolute murder, a little over a buck a wing iirc |

I haven't done it in a bit because I usually only grill mine now due to simplicity, but if you steam about a dozen of them for about a half an hour - 45 minutes, it renders the fat out of the wings. Then you put them on a raised drying rack over top of a cookie sheet and bake them about 450-500 degrees (ideally a convection oven) and they'll get as crispy as they will when deep fried. You have to clean the steamer and they take a little more time, but they're damn good. |

I've had great chicken, and I've had plenty of decent wings. But I've never sought out or experienced any place that takes immense pride in their wings. I view it at relatively cheap, reliably tasty, and hard to **** up. Probably my favorite sauce is Mango Habernero at B^3. Boneless unlimited $.50 Wednesdays. |

24 wings, put in large ziplock bag with generous coating of olive oil. Sea salt and fresh ground pepper all over and mix up. Leave in bag for 4 - 12 hours. Grill over charcoal, low heat, turn frequently. Put in big bowl and douse liberally with Frank's wing sauce. Thats it. :shrug: |

If you steam the wings first, do they get rubbery? Or does frying take that away?
I seriously hate to when people bring wings to a potluck in a crock pot. Makes them rubbery and inedible. Same thing with a pizza place here that has great wings. But it is only delivery or take out. You never want them delivered because they get rubbery. If you pick them up they're better, but I can still tell. |

by the way - those sound good, Tiny - sometimes you just need the basics - I'm sure the difference was the charcoal. Love some char-cooked food!

if you like Gorrozo's chicken spidini, they sell an Amogio marinade. I've marinaded some wings in it, the before grilling/baking/frying ad some salt and pepper and some ground cayenne pepper. They turn out pretty good if you like the spidni flavor. Usually do a different styles of wings; these turn out good for the folks who prefer wings not tossed in a sauce.
otherwise, I just stick to salt and pepper and grill. I've experimented in the past with adding some olive oil, some minced garlic, some worcestershire, and some sliced peppercini's with a spash of the peppercini juice; add chicken to a ziplock and add the liquid, and let marinade for a few hours. the salt and pepper before cooking. turned out pretty tasty. |

Ziploc with oil for about 10 hours. Salt and pepper. Grill. Apply Frank's Buffalo Sauce. Flip. Sauce the other side. Flip. Make my own ranch dressing. |
