My NYE BBQ meatballs and my standard cheese dip
 
1 Can Evaporated Milk
3 LBS hamburger...I use ground chuck or sirloin
2 cups quick oatmeal (I use 1 and 1/2 cup cooked rice as hubby is allergic to oats)
2 eggs
1 cup chopped fresh onions...chop them really small
1/2 tsp garlic powder
2 tsp salt
1/2 tsp pepper
2 tsp chili powder

Mix well and shape into size of large walnuts or golf balls
place in flat pans one layer to each pan


Sauce

2 cups catsup
1 cup brown sugar
2 Table spoons liquid smoke
1/2 tsp garlic powder
1/2 cup chopped onions chopped fine

Dissolve and pour over meatballs. Cook at 350 for one hour


My Cheese Dip

1 can mild rotel tomatoes
1 can petite diced tomatoes
1 lb ground chuck or sirloin
1 block of Velveeta cheese

cube the cheese
crumble and fry the hamburger and salt and pepper to taste.
Layer tomatoes hamburger and cheese in the crock pot and heat over low

Stir often to keep from scorching the cheese.

I use Tostito scoop chips but any are fine.

that cheese dip is awesome, I know its responsible for about 5% of my current body mass

do you put the hamburger in it? Many don't and they also don't put the other can of tomatoes in it.

It just doesn't taste the same when it is just velveeta and one can of rotel.



Try the dip on baked potatoes. YUMMY

Yes I have several cans in the pantry and lots of peppers from the garden in the freezer to spice it up.

I pour the sauce on the meatballs before I cook them, but I have thought about making extra sauce and mixing it in with the meatballs too. I guess it is preference
