I'll preface by saying that it's technically not completely possible to *legally* prevent a speed reading 100%, but there are setups to make it so that a measurement can't be locked in by the gun until you are about 800 to 1000 ft from the cop, and by then you will have been alerted long before and able to slow down easily.
As for instant on technology, there are ways that are completely legal to completely jam up the gun from getting a reading. In fact, depending on the setup, you can legally overpower most laser guns to the point where it will cause the gun to power cycle and go through its initial startup sequence.
Of course, they had a law enforcement agency helping then by use of their different types of guns, so I'm sure that created a bit of a conflict of interest. Otherwise, I'd suspect that policing agency wouldn't be willing to participate.
I know it's a minor thing, and as knit picky as it is, but the interest for me and I would guess others lies in the fact that they are supposed to be taking an objective and scientific method of experimentation and testing to reach a relatively valid conclusion that is soundly based on the evidence.
It's still a fun show, but I can agree with others that it's sort of dumbed itself down. Maybe the shakeup with the principal cast will see a return to its early day roots?

That episode did suck. They know there is ways of doing it but they definitely didn't push the issue.
