Just a brief bit from actual world history -- when the Mongols conquered, they often identified skilled tradesman, engineers and the like, and impressed them into their army. As a result, they became very successful at sieges, actually.
Winterfell gets surrounded and starved out. It's landlocked, so they're ****ed once the food runs out.
King's Landing would be much tougher as it had access to open water. The dothraki, hating water, would struggle with that one.
