Take it from someone who worked in the family, liquor store business for several years. The criminal has more rights than you. PERIOD!
People would come in the store and get pissed because I wouldn't give them a 40 oz. on credit and start tearing up displays on the counter and out of the floor. Some would just grab shit and walk out. There really is nothing you can do about it.
If you try to restrain them physically they will have you arrested for assault. If they rob you at gun point, the instant they turn their back to you they are in the clear and you can do very little to stop them.
One guy I know put remote locks on his door so if you try and walk out without paying he hits a button and the doors lock. That's about the best and only way to handle it without getting yourself in trouble.
