Off the stem when stem just about to snap which usually takes anywhere from 5-7days from hanging. After the flowers are off the stem they placed in jars, or clean food grade 5 gal. buckets with opening the containers several times a day the first week for a few minutes each time. I will give a light shake to the container to move the flowers around and once a day I will dump all the flowers out and placed back in the jar to just rotate them fully. The 2nd week I will only open the containers for a few minutes each as needed. 3rd week when placed in a container for the long cure I normally will place a Boveda 62 pack just to keep it check.
I'd like to see you with this type of trichrome production next year.

this will be my first year trying to dry/cure three full on females, plus my small 10 year old bonzai's. biggest yield for me ever.
your suggestions regarding drying i am familiar with. the only problem i will have is i will have to empty out my bottom shed to allow the variables necessary for drying. but i can make it work.
if i could get the crystalization you presented in those photo's i would be over the moon.
i will admit, i let the garden overgrown and didn't pay much attention to the weeds and such. i just let things go as they may.
next year i have a huge advantage. not only the greenhouse panels but will be covering the top of the garden with some substrate, will be tilling the soil (adding fertilized mulch from the newly acquired chickens and their enriched soil), and occasional nutrients added. i don't plan to monitor soil temps and ph so to speak, but will be 'aware' of problems. these plants have been care free entirely.
as well i do plan to 'top' the plants next year, per your suggestion.
again, i have to stress, unless i can turn bush weed into kind bud, my seed genetics may hinder me from huge potency.
