The rest of the story. Sorry I didn't get a pic of all of it done, as it was nearing the end we got a call that almost jacked up the whole, VERY time sensitive, deal. But it was awesome.
And the younger son has now helped to prepare a heart. One word of advice, you'll need a very sharp larger knife, and a razor-sharp smaller knife.
#1 was tenderloin, #2 was backstrap, and #3 was the heart. And that should surprise nobody. But I'll always keep the heart now. It's very very good.
