These burrito bowls are becoming a bit of a regular Sunday thing for me as they're really easy to transition into a couple lunches during the week. The rice is a base, swap out a protein here, sub in a grilled veg there, or throw in a different sauce. Customize them enough not to burn yourself out and it's a good way to capture your food groups into one bowl/tupperware throughout the week.
