I literally asked my wife "where's the boiling pitch"? It's so damn standard.
But maybe the though was that they used all the combustibles in the fiery moat?
The 30 foot walls I can easily get over. Be mindful that the North is nowhere near as well populated as the other regions of Westeros. The Starks could legitimately have felt, for a wide variety of reasons, that a massive fortification was unnecessary -- or they were not wealthy enough to construct one.
