If you don't have any pork tenderloin, you can use just regular pork sausage or some ground turkey. I had some tenderloin that I needed to use up, so I chopped it up real good, and it blends in wonderfully. And if you don't have Zim's just use your favorite hot sauce like sriracha, Tabasco or Frank's Red Hot. Zims has amazing flavor. It's also great on eggs like Tabasco.
