How about making it a game stat metric like time holding the lead. If you have the lead for most of the game, especially if a team is making a comeback and gets a game tying field goal to go to OT, then why shouldn't the comeback team have to defend first. Seems as fair as any other reason that isn't luck of a coin flip. I can't think of anything in football that would equate to a jump ball and actually be somewhat fair.
