I went to OSU and I'm embarassed to admit I've never heard of this Beaver cheese. Frosty, you? We're mostly known for our beef, being called Cow College by lame Duck fans, and when the wind blows the right way, you can smell the evidence that a lot of cows really are nearby. It's gotta be a shock to football recruits from places like LA.

In Oregon, we have a non-collegiate creamery called Tillamook. I've taken their factory tour and their cheese curds are top notch, and all their stuff is good. It's not niche/gourmet, but it's my go-to for dairy out here in the PNW.

I'm gonna have to try this Beaver cheese though.
