In Oregon, we have a non-collegiate creamery called Tillamook. I've taken their factory tour and their cheese curds are top notch, and all their stuff is good. It's not niche/gourmet, but it's my go-to for dairy out here in the PNW.
I'm gonna have to try this Beaver cheese though.
