That's because nobody else is running it.
It's something of a dinosaur in today's NFL so teams aren't used to it.
Though honestly, I'd just treat Kelce as a WR in those formation and defend it like a typical 2 TE set with Bell in the 'Dunn' role and Gray as a conventional TE.
I hope we don't over-expose it because I don't think it's actually all that tough to counter if you get enough looks at it.
