I made one last weekend. Boil 2.5 to 3 hours. Throw in some pepper corns (about 20) and a bay leaf if you like.
After the meat is done (tender to a fork) remove from pot. You can cook cabbage, potatoes, carrots, onion etc in the stock. Cook root any thing but cabbage about 20 -25 min, then throw the cabbage in at the end for an addition 10 - 15. Put the meat back in the pot for 2-3 min to heat before serving.
Extremely easy and delicious.
