I'll bet I cooked more meat than everyone else today.
Pulled 126 racks of ribs from 2 cookers today. Have another 144 to cook tommorow. Been a busy day. 270 total. Ribs are averaging just over 4 lbs each before they go on. Cooking with Apple wood that had been cut for close to two years, it's doing great.
Cooking them makes for a nice church fund raiser. We used to have to work at selling, but we've gotten enough of a reputation for our ribs that people have been bugging us for the last 3-4 months wondering when we were going to cook again.
I'll be re-lighting the fires between 5 and 5:30 am in the morning.
