We are still collecting and delivering. Once everything is collected and our expenses are paid for, we should be close to $2,500. It's a pretty rough 2 days, but well worth it - this is the best fundraiser I have ever come accross. We have enough of a reputation for our ribs that they are fairly easy to sell, and we have the operation streamlined so the work goes pretty well. We could probably sell quite a few more, we have a good amount of help in the work, but I'm the only cook. And, by the time we are done on saturdays, everyone's pretty well worn out.
We cook pork spare ribs that run just over 4lbs each before cooking. We buy the higher quality ribs, they costs more, but our reputation is too important to take a chance. The bill for the ribs alone will run a little over $2k. We get $18 a slab, usually, we average a little less than half profit, but ribs were cheaper this time and we should just about double what we spent.
