I only had a couple of casings left over after the andouille and breakfast sausage, so I just pitched 'em.
The casings are kind of hard to find here in Springville. I got some I think at a Harter House store in a small package. Turned out to be just the right amount.
Would like to find some sheep casings and make my own frankfurters. Nobody knows what they put in hotdogs you get from the store.
Up next, Bratwurst, if I can find some veal.
