Dunno so much about the refrig, but in a freezer, the frost free function sucks all the moisture out of the compartment. That's why exposed meat gets 'freezer burn' which is actually freezer dehydration. In a freezer, you run the risk of the droplets freezing before being pulled from the part. Maybe the refrig thing is the crisper, which also pulls moisture from the air in it.
