A few 'diet' dishes I enjoy. Note that they often use lemon, olive oil and some parmesan cheese, so there aer more calories than if you just eat a bowl of boiled weeds. The few calories in the oil and parmasan cheese = a little goes a long way and means you won't burn out on dull tastes. For me, this stuff isn't a 'diet'...it's how I have to live, so there's no 'do without flavor for just a week or two'. But choose taste enhancers that suit your purpose - lemon juice, flavored vinegar, tabasco is your friend.

I make this w/triple rinsed canned beans (kidney beans, great northern) and add a splash of good vinegar or lemon. Be sure to look for olive-oil packed tuna.

I replace higher-fat/calorie turkey thighs w/a small turkey breast, frozen is fine (thaw it first). Add a little crushed red pepper or sage if you like. Cook, pick meat from bones and enjoy. Use the resulting broth in garlic soup. (saute' 4 minced cloves garlic for 3 minutes, add a big pinch of crushed red pepper, thyme, black pepper and 2 cups broth, your turkey broth + canned, bring to boil. Add 1 beaten egg, stir well and turn off heat. Serve piping hot, w/spoonful of sherry. This helps 'break up' a head cold.)
