The same can be said for any calorie-restriction diet. Once you start eating more than you burn, you'll gain weight, low-carb or not. The thing about high-protein and fat diets is that it's hard to overeat because of how energy dense the food is. Your stomach is sensitive to fatty acids, and as you take them in, you feel much fuller for longer. That's why it's easy to eat a ton of carbs and still feel hungry... your stomach isn't sensitive to carbs in the way that it is to fats. So, it doesn't send the signal to stop eating like it does when you take in fat.
