FWIW, the only time my weight was fluctuating wildly my glucose was all out of wack, diabetes can make your weight go haywire. If you're seeing rapid drops/gains, please test your blood sugars (Walmart has 'relion' kits that are affordable even if you don't have insurance).
Re: Lowcarb - I get a lot of info
at this Forum. One of my favorite dishes from there is 'crack slaw' - addictive as crack. It's a simplified thai recipe, per one commenter. This is my current version:
1 bag broccoli slaw or cabbage & carrot 'rainbow' slaw
1 lb hamburger
1/2lb to 1 lb hot pork sausage
1 small chopped onion
Minced ginger
3 cloves minced garlic
1 teaspoon onion powder
1 teaspoon garlic powder
1 tbsp sesame oil + more to taste
Dash soy sauce
Sriracha chile/garlic paste or your favorite hot sauce*
Brown hambuger & sausage with onion/garlic powders and set aside in a colander to drain the fat. Stirfry onion then the slaw until tender crisp with the sesame oil, add the ginger, then the garlic for ~ 1 minute. Toss the hamburger and slaw together and season to taste with soy sauce and some more sesame oil, add chili/garlic paste* to taste. Recipe is easy to double.
