Depends on your goals. If you're focusing more on strength, use 2 as warmup sets, then one heavy set, one heavier set, and then one heavy set.
If you're more hypertrophy-focused, pick a weight you can lift 8 times, but only do 5 and rest 1 minute between sets. Use that weight all 5 sets.
