IMO, Tex-Mex hides the flavor and is too "Americanized" (Don Bell founded the first Taco Bell in the 1950's and was the first guy to deep fry a corn tortilla and sell it in a drive thru restaurant).
True Mexican food is far more complicated, whether it's Oaxacan or Baja or from Mexico City.
Mole's and guacamole and fish tacos and mariscos are far more interesting than refried beans, cheddar cheese and "spicy " hamburger.

Oaxaca cheese is very bland. It's white and stringy with little flavor. It's kind of like fresh mozzarella, which needs alot of help.
If you can't find a really good authentic Mexican restaurant in KC you haven't been to Argentine. Of course, it's on the KS side, so that deters the MO bitches.
