That's not necessarily true. There are plenty of quality restaurants that augment your beef choice with a delicious sauce. If you're chewing on a piece of jerky then, yeah I guess that rule holds true. Besides, you can't really disguise a crap cut just by throwing sauce on it. There will still be nastiness underneath.
