When they were in Atlanta, they were careful not to get any walker blood or gore on them. They painted it on overcoats so that they could walk through the horde and escape. I don't recall when the decided they could be more less careful about getting fluids on them. Obviously, the close quarter bludgeoning is going to produce spray, though they don't always show it on our protagonist's clothing.
Perhaps this is one of those things better not scrutinized in order to allow the story line to continue. Lots of zombie physiology doesn't make logical sense.
