Good question: I would think booth announcers use big headsets and microphones so they are connected to live (FOX) telecasts on monitors in front of them. They look at replays (and live feed) while watching the track.
They have setup cameras around the track. You will also notice they speak with driver-to-crew during the race.
The headsets might also cut down on sound levels on the track. Probably a "do everything" type of headset...
