An interesting anecdote from my time behind the bar in regards to the 2oz shot thing: I used to have a couple that would come in from time to time that had come from South Carolina. They told me that until just a few years ago the state law there dictated that bars had to sell the 2oz "airplane bottles" for a drink. So any time some one would order a whiskey and 7, for example, they got a 2oz pour.
Completely crazy alcoholic beverage law (and one of only many across this country).
