Some of my best memories are freezing my ass off with my dad. And you know what - those memories would be even better if it was 70 degrees.
The only reason people think "the elements" is a part of football is because they grew up in it. The rolling roof is the best of both worlds - you can be outside when it's reasonably nice - but if it's a blizzard - well good news! You don't have to deal with that shit.
