I grill wings at my tailgates. A couple of people have said they are the best wings they've had. I do not claim to be any culinary genius. I just made them in a simple way. I think they're pretty good. maybe these folks were drunk.
24 wings, put in large ziplock bag with generous coating of olive oil. Sea salt and fresh ground pepper all over and mix up. Leave in bag for 4 - 12 hours. Grill over charcoal, low heat, turn frequently. Put in big bowl and douse liberally with Frank's wing sauce. Thats it. |

If you steam the wings first, do they get rubbery? Or does frying take that away?
I seriously hate to when people bring wings to a potluck in a crock pot. Makes them rubbery and inedible. Same thing with a pizza place here that has great wings. But it is only delivery or take out. You never want them delivered because they get rubbery. If you pick them up they're better, but I can still tell.

by the way - those sound good, Tiny - sometimes you just need the basics - I'm sure the difference was the charcoal. Love some char-cooked food!

if you like Gorrozo's chicken spidini, they sell an Amogio marinade. I've marinaded some wings in it, the before grilling/baking/frying ad some salt and pepper and some ground cayenne pepper. They turn out pretty good if you like the spidni flavor. Usually do a different styles of wings; these turn out good for the folks who prefer wings not tossed in a sauce.
otherwise, I just stick to salt and pepper and grill. I've experimented in the past with adding some olive oil, some minced garlic, some worcestershire, and some sliced peppercini's with a spash of the peppercini juice; add chicken to a ziplock and add the liquid, and let marinade for a few hours. the salt and pepper before cooking. turned out pretty tasty.

Don't bother Red, but if you change your mind, make sure you at the very least bring a bottle of Pepto-Bismol. A portable stomach pump probably wouldn't be a bad bet either.

I actually like B-Dubs. Only place I can find with breaded wings. Waaaaaay over-priced though and the service at both Springfield locations is horrendous.
